Classic Peanut Butter Cookies Recipe
Ingredients
Makes : 3 dozen
- 1/2 cup peanut butter
- 1/2 cup applesauce
- 1 cup peanut flour (finely ground peanuts)
- 1/2 cup whole wheat flour
- 2 tablespoons flax seeds, ground
- 4 tablespoons water
- 1/2 cup sugar
- 1 pinch of salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
Method
- In a small bowl or cup, combine the flax seeds with water and set aside to soak
- In a bowl, mix the peanut butter, applesauce, soaked flax seeds, sugar and a pinch of salt
- Mix with a hand mixer on low speed until well blended
- Stir in the flours mixed with baking powder and baking soda
- Take spoonfuls of batter and form small balls
- Arrange all of them on baking trays lined with baking paper then, using a fork, press them down slightly, making sure each has a mark from the spoon
- Bake in a preheated oven at 350 for 15-17 minutes or until fragrant and slightly golden brown
- Store in an airtight container for 1-2 weeks
