Jose Cuervo Margarita Mix

Jose Cuervo Margarita Mix

Ingredients

Makes 30 pikelets

  • ¾ cup self-raising flour
  • ¼ cup wholemeal flour
  • ½ teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg, lightly beaten
  • 2 teaspoons rice bran oil or cooking spray oil

Method

  1. Crumpets v Pikelets
  2. Sift flours and baking soda into a medium mixing bowl
  3. Add buttermilk to mixture with egg and stir until batter forms
  4. Brush or spray a medium heavy-based, non-stick frying pan with oil and set over medium heat
  5. Drop tablespoons of batter into pan 2-3cm apart and cook for 1-2 minutes, or until small bubbles appear on the pikelets surface
  6. Flip pikelets and cook for 1 more minute, or until lightly golden
  7. Repeat cooking process with remaining batter, transferring cooked pikelets to a plate
  8. Keep them warm in a low-temperature oven
