Classic Autumn Salad Recipe
Ingredients
Makes 4 servings
- 1 pound sweet potatoes, peeled and cut into 1/2-inch dice
- 1 tablespoon pure maple syrup
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 2 tablespoons apple cider vinegar
- 1/3 cup grapeseed oil
- 1 ripe Bosc pear
- 1 crisp red-skinned apple, such as Red Delicious, Fuji, or Gala
- 2 celery ribs, chopped
- 1/2 cup toasted walnuts or pecans
- 1/4 cup sweetened dried cranberries
- 2 green onions, minced
Method
- In a large saucepan of boiling salted water, cook the sweet potatoes until just tender, about 20minutes
- Drain well, place in a large bowl and set aside
- In a separate large bowl, combine the maple syrup, mustard, salt and vinegar
- Whisk in the oil until well blended
- Set aside
- Core the pear and apple and cut into 1/2-inch dice
- Add them to the bowl with the dressing and toss to coat
- Add the pear and apple mixture to the sweet potatoes
- Add the celery, walnuts, cranberries and green onions
- Toss gently to combine and serve
