Chocolate-Covered Peanut Butter-Granola Balls Recipe
Ingredients
Makes about 3 dozen pieces
- 1/2 cup granola
- 1/4 cup sugar
- 1/2 cup golden raisins
- 1/2 cup unsalted shelled sunflower seeds
- 1/4 cup sesame seeds
- 1 1/2 cups creamy peanut butter
- 2 cups vegan semisweet chocolate chips
Method
- In a food processor, pulse together the granola, sugar, raisins, sunflower seeds and sesame seeds
- Blend in the peanut butter a little at a time to form a smooth dough
- Refrigerate until chilled, for several hours or overnight
- Form the mixture into 1-inch balls and set aside
- Melt the chocolate in a double boiler or microwave
- Dip the balls into the melted chocolate and arrange on an ungreased baking sheet
- Refrigerate until firm, about 30 minutes and serve
