Chocolate-Banana Pudding Recipe

Ingredients

Makes 6 servings

  • 8 ounce vegan semisweet chocolate chips
  • 2 ripe bananas
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chopped unsalted roasted peanuts

Method

  1. Melt the chocolate in a double boiler or microwave
  2. Set aside
  3. In a blender or food processor, puree the bananas
  4. Add the maple syrup and vanilla and blend until smooth
  5. Add the melted chocolate and blend until smooth
  6. Divide the pudding evenly among 6 dessert bowls
  7. Refrigerate 2 hours, until well chilled
  8. Garnish with chopped peanuts
