Bruschetta Chicken Pasta Italian
Ingredients
- 1 lb (450 g) spaghetti
- 4 cups (1 L) chicken or vegetable broth
- 3-4 boneless skinless chicken breasts
- 4 small plum tomatoes
- ¼ cup (60 mL) loosely packed fresh basil leaves
- 3-4 garlic cloves
- 1 cup (75 mL) olive oil
- ½ oz. (15 g) fresh Parmesan cheese
Method
- Place the chicken breasts in a large bowl
- Season
- Marinate for at least 15 minutes or up to 8 hours
- Break the spaghetti noodles in half and place them in the pan
- Add the broth
- Simmer, covered, for 12-15 minutes
- Cut the tomatoes and basil into large pieces
- Add the garlic
- Add the olive oil
- Heat the grill or bring a grill pan to medium-high heat
- Then, grill the chicken until it’s cooked through
- Atop the pasta place chicken breast with a few spoonfuls of the bruschetta topping
- Grate the fresh Parmesan cheese over the pasta
- Stir and serve
