Chicken Broth Slow Cooker Recipe
Ingredients
- 1 cup (160 g) sliced onion
- 1 cup (130 g) sliced carrot
- 1 cup (100 g) sliced celery
- 1 medium chicken
- 1½ cups (355 ml) water
Method
- Place vegetables in bottom of slow cooker
- Put chicken on top, breast side up
- You can also use leg quarters, necks, and backs or whatever is cheap
- Pour water over
- Cook on low 8 to 9 hours
- Remove chicken from pot and let cool until easy to handle
- Remove chicken from bones and cut up as needed
- Strain broth and discard veggies
- Cool broth in refrigerator and remove fat from top
- Broth may mixed with equal amount of water and used in any recipe calling for chicken broth
- Use chicken in other recipes or freeze until needed
- Yield: 8 servings
- Per serving: 77 g water; 46 calories (17% from fat, 50% from protein, 33% from carb)
