Cherry-Hazelnut Scones Recipe
Ingredients
Makes 8 scones
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 cup vegan margarine
- 1/3 cup plain or vanilla soy milk
- 1 teaspoon pure vanilla extract
- 1/3 cup sweetened dried cherries
- 1/3 cup coarsely chopped hazelnuts
Method
- Preheat the oven to 375°F
- Lightly oil a baking sheet and set aside
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg
- Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
- Add the soy milk, vanilla, cherries and hazelnuts
- Stir until just blended
- Do not overmix
- Transfer the dough to a lightly floured work surface
- Press the dough into a 1-inch-thick circle
- Cut the dough into 8 wedges and place them on the prepared baking sheet
- Bake until golden brown, about 20 minutes
- Cool for 5 minutes
- Serve warm
