Cheesy Rice Casserole Recipe

Ingredients

  • 2 cups hot cooked rice
  • 1 (2.8 ounce) can French fried onions, divided
  • 1 cup sour cream
  • 1 (16 ounce) jar medium salsa, divided1 cup (4 ounce) shredded Cheddar or taco-blend cheese, divided

Method

  1. Combine rice and 2/3 cup French fried onions
  2. Spoon half the rice mixture into a microwave-safe 2-quart shallow casserole
  3. Spread sour cream over rice
  4. Layer half of the salsa and half of the cheese over sour cream
  5. Top with remaining rice, salsa and cheese
  6. Cover with vented plastic wrap
  7. Microwave on high 8 minutes or until heated through
  8. Sprinkle with remaining onions
  9. Microwave 1 minute until onions are golden

Yields 6 servings
