Char Siu Pork Ribs Pressure Cooker

Char Siu Pork Ribs Pressure Cooker

Ingredients

SERVES 4 to 6 – Cooker: 6- to 8-quart – Time: 15 minutes at HIGH pressure

  • 2 tablespoons olive oil
  • 2 to 2½ pounds country-style or baby back pork ribs, the baby backs cut into 2- to 3-rib sections or individual ribs
  • 1 clove garlic, minced
  • 3 tablespoons ketchup
  • 3 tablespoons hoisin sauce
  • 3 tablespoons reduced-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon mirin or sake
  • 2 teaspoons grated peeled fresh ginger
  • pinch Chinese five-spice or ground allspice.
  • pinch ground white pepper.
  • 1/3 cup low-sodium chicken broth

FOR SERVING

  • 3 green onions, trimmed and thinly sliced
  • 2 tablespoons minced fresh cilantro

Method

  1. In a 6- to 8-quart pressure cooker, heat the oil over medium-high heat until very hot
  2. Brown the ribs in batches in a single layer on both sides, 5 to 7 minutes per batch
  3. Use tongs to transfer the browned ribs to a plate
  4. Add the garlic to the pot and stir for 30 seconds
  5. Add the ketchup, hoisin, soy sauce, honey, mirin, ginger, five spice, and pepper to the pot and stir to combine
  6. Return the ribs and any accumulated juice to the pot
  7. Close and lock the lid
  8. Place a heat diffuser on the burner, and set the pressure cooker on it
  9. Set the burner heat to high
  10. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  11. Set a timer to cook for 15 minutes
  12. Remove the pot from the heat
  13. Open the cooker with the Natural Release method; let stand for 15 minutes
  14. Be careful of the steam as you remove the lid
  15. The ribs should be tender, with the meat falling off the bone
  16. Transfer the ribs to a platter and tent with aluminum foil to keep warm
  17. Skim any fat from the top of the sauce
  18. Stir in the cilantro and green onions
  19. Spoon the sauce over the ribs and serve immediately with lots of napkins
