Ingredients

  • 2½ pounds (1.1 kg) beef round steak
  • 1 cup (160 g) chopped onion
  • 1 tablespoon (15 g) salt-free mexican seasoning
  • 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
  • 1 cup (150 g) red bell pepper, cut into 1-inch (2 5 cm) pieces

Method

  1. Trim excess fat from beef and cut into 2-inch (5 cm) pieces
  2. Combine with onion in slow cooker
  3. Mix together seasoning and undrained tomatoes
  4. Pour over beef
  5. Place red pepper on top
  6. Cover
  7. Cook on low 6 to 8 hours or until beef is tender
  8. Yield: 8 servings
  9. Per serving: 183 g water; 201 calories (22% from fat, 68% from protein, 10% from carb)
