Spicy White Bean Tomato Soup Recipe

Ingredients

Makes 4 to 6 servings

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 (28-ounce) can crushed tomatoes
  • 1 (4-ounce) can diced hot green chiles, drained
  • 3 cups cooked or 2 (15.5-ounce) cans white beans, drained and rinsed
  • 2 tablespoons creamy peanut butter
  • 3 cups vegetable broth or water
  • salt
  • 1 tablespoon fresh lime juice
  • minced fresh parsley or cilantro, for garnish

Method

  1. In a large soup pot, heat the oil over medium heat
  2. Add the onion, cover and cook until soft, about10 minutes
  3. Add the tomatoes, chiles and beans
  4. Simmer, covered, for 15 minutes
  5. Stir in peanut butter, broth and salt to taste and simmer, uncovered, 15 minutes longer
  6. Puree the soup in the pot with an immersion blender or in a blender or food processor, in batches if necessary and return to the pot
  7. Stir in the lime juice and simmer over medium, stirring, until hot
  8. Ladle into bowls, garnish with parsley and serve
