Carrot Orange Salad Cashews Cilantro

Ingredients

Makes 4 servings

  • 1 pound carrots, shredded
  • 2 oranges, peeled, segmented and chopped
  • 1/2 cup unsalted roasted cashews
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lime juice
  • 2 teaspoons sugar
  • salt and freshly ground black pepper
  • 1/3 cup olive oil

Method

  1. In a large bowl, combine the carrots, oranges, cashews and cilantro and set aside
  2. In a small bowl, combine the orange juice, lime juice, sugar and salt and pepper to taste
  3. Whisk in the oil until blended
  4. Pour the dressing over the carrot mixture, stirring to lightly coat
  5. Taste, adjusting seasonings if necessary
  6. Toss gently to combine and serve
