Ingredients
Servings : 4-6 dishes.
- 1 1/2 cups whole wheat flour
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cardamom
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1/2 cup soy yogurt
- 1/2 cup applesauce
- 1 cup maple syrup
- 1/2 cup coconut oil
- 2 cups grated carrots
- 1 teaspoon vanilla extract
- 1 pinch of salt
Method
- In a large bowl, sift the flours with baking soda, baking powder, cardamom and lemon juice, as well as a pinch of salt
- In another bowl, mix the lemon juice, yogurt, applesauce, maple syrup, vanilla and coconut oil
- Combine the two mixtures then fold in the grated carrots
- Pour the batter into a greased 9-inch cake pan then bake in a preheated oven at 350F for 40-50 minutes or until a skewer inserted in the middle of the cake comes out clean
- Serve sprinkled with powdered sugar
