Brown Rice With Artichokes Chickpeas Tomatoes Recipe
Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup frozen artichokes hearts, thawed and chopped
- 1 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1 1/2 cups cooked or 1 can chickpeas, drained and rinsed
- 1 1/2 cups long-grain brown rice
- 3 cups vegetable broth or hot water
- salt and freshly ground black pepper
- 1 cup ripe grape tomatoes, quartered
- 2 tablespoons minced fresh parsley
Method
- In a large saucepan, heat the oil over medium heat
- Add the garlic and cook until softened, about 1minute
- Add the artichokes, basil, marjoram and chickpeas
- Stir in the rice and broth
- Season with salt and pepper to taste
- Cover tightly and reduce heat to low
- Simmer until the rice is cooked, about 30 minutes
- Transfer to a serving bowl, add the tomatoes and parsley, taste, adjusting seasonings if necessary and fluff with a fork
- Serve immediately
