Ingredients
Makes 4 servings
- 1 pound broccoli, cut into small florets
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup thinly sliced white mushrooms
- 1/4 cup dry white wine
- 2 tablespoons minced fresh parsley Salt and freshly ground black pepper
- 1/2 cup slivered toasted almonds
Method
- Steam the broccoli until just tender, about 5 minutes
- Run under cold water and set aside
- In a large skillet, heat 1 tablespoon of the oil over medium heat
- Add the garlic and mushrooms and cook until soft, about 5 minutes
- Add the wine and cook 1 minute longer
- Add the steamed broccoli and parsley and season with salt and pepper to taste
- Cook until the liquid is evaporated and the broccoli is hot, about 3 minutes
- Transfer to a serving bowl, drizzle with the remaining 1 tablespoon oil and the almonds and toss to coat
- Serve immediately
