Broccoli With Almonds Recipe

Ingredients

Makes 4 servings

  • 1 pound broccoli, cut into small florets
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 cup thinly sliced white mushrooms
  • 1/4 cup dry white wine
  • 2 tablespoons minced fresh parsley Salt and freshly ground black pepper
  • 1/2 cup slivered toasted almonds

Method

  1. Steam the broccoli until just tender, about 5 minutes
  2. Run under cold water and set aside
  3. In a large skillet, heat 1 tablespoon of the oil over medium heat
  4. Add the garlic and mushrooms and cook until soft, about 5 minutes
  5. Add the wine and cook 1 minute longer
  6. Add the steamed broccoli and parsley and season with salt and pepper to taste
  7. Cook until the liquid is evaporated and the broccoli is hot, about 3 minutes
  8. Transfer to a serving bowl, drizzle with the remaining 1 tablespoon oil and the almonds and toss to coat
  9. Serve immediately
