Ingredients
Makes 4 servings
- 1 1/2 pounds fingerling potatoes
- 4 cups broccoli florets
- 3 tablespoons olive oil
- 3 garlic cloves, minced ¾ cup chopped walnut pieces
- 1/4 teaspoon crushed red pepper
- 1 1/2 cups or 1 can white beans, drained and rinsed
- 1 teaspoon dried savory
- salt and freshly ground black pepper
- 1 tablespoon fresh lemon juice
Method
- Steam the potatoes until tender, about 20 minutes
- Set aside
- Steam the broccoli until crisp-tender, about 7 minutes
- Set aside
- In a large skillet, heat 2 tablespoons of the oil over medium heat
- Add the garlic, walnuts and crushed red pepper
- Cook until the garlic is softened, about 1 minute
- Stir in the steamed potatoes and broccoli
- Add the beans and savory and season with salt and black pepper to taste
- Cook until heated through, about 5 minutes
- Sprinkle with lemon juice and drizzle with the remaining 1 tablespoon olive oil
- Serve immediately
