Broccoli And Mushroom Dip Recipe

Ingredients

  • Serving Size : 1
  • 2 cups Broccoli – chopped
  • 1 tablespoon Vegetable oil
  • 1 Garlic clove
  • 1/2 Onion – chopped
  • 1/4 pound Mushrooms – chopped
  • 3/4 cup Low-fat cottage cheese
  • 1/4 cup Low-fat plain yogurt
  • 1 Pinch Salt and Pepper

Method

  1. Cook broccoli just until tender-crisp, (3 minutes).
  2. Drain and put under cold water.
  3. In nonstick skillet, heat oil over medium heat; add garlic, onion and mushrooms and cook, until onion is tender.
  4. Set aside.
  5. In blender, combine cottage cheese and yogurt; season with salt and pepper to taste.
  6. Process just until mixed.
  7. Cover and refrigerate.
  8. Yield: 2 1/2 Cups
