Blueberry Muffins Recipe
Ingredients
- Serving Size : 6
- 2 2/3 Cups Flour – sifted
- 1 Cup Fresh Blueberries
- 2 2/3 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 4 Tablespoons Butter
- 1/3 Cup Sugar
- 1 Egg – well beaten
- 1 Cup Milk
Method
- Sift flour once and measure.
- Combine berries with 1/3 cup flour.
- Sift remaining flour with baking powder and salt.
- Cream butter, add sugar gradually and cream well.
- Add egg.
- Add flour, alternately with milk, a small amount at a time.
- Beat well after each addition.
- Fold in berries.
- Bake in greased muffin pans in hot oven (425 degrees) 25 minutes.
- Makes 18 medium sized muffins.
