Blueberry Keto Mug Cake
Ingredients

If you are on a VERY strict Keto diet, you may want to share with a friend, especially if you decorate it:
- 1 egg
- 1 tablespoon blueberry pie filling, unsweetened
- 2 tablespoons oil
- 1/8 teaspoon vanilla extract
- 1/8 teaspoon baking powder
- 4 tablespoons granulated sweetener
- 3 tablespoons lemonade Crystal Light Powder
- 4 tablespoons almond flour (1/4 cup)
Method
- Grease the mug lightly with butter, margarine, oil or cooking spray
- Use a small bowl to mix ingredients
- Beat the egg with a fork then mix in the rest of the liquid ingredients
- Add the dry ingredients and mix well
- Pour the batter into the mug, no more than halfway
- Smooth the top with a spoon if you intend to frost your blueberry mug cake
- Place a damp cloth on the work surface and bang the mug gently but firmly five or six times to remove air bubbles
- Put the mug on a small plate in the microwave and your keto mug cake is ready to bake
- Cook your keto mug cake for 3 to 4 mins according to your microwave and personal taste
- Is it done? Insert a small sharp knife into middle of the mug cake
- If the knife comes out clean, the mug-cake is done
- Wait 2 mins, then use a blunt knife to loosen the mug cake and turn it onto plate
- Position the mug cake so that the slightly rounded top is on top
- Your Blueberry Keto Mug Cake should look a bit like a large muffin
- Variation: Frost the Keto Mug Cake with blueberry pie filling, or carefully cut the mug cake in two, and frost each half individually
- Decorate, if you wish, with fresh or frozen blueberries or strawberry slices
