Blueberry-Almond Scones Recipe

Ingredients

Makes 8 scones

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup vegan margarine
  • 1/3 cup plain or vanilla soy milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup frozen, fresh, or dried sweetened blueberries
  • 1/2 cup slivered almonds

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a baking sheet and set aside
  3. In a large bowl, combine the flour, sugar, baking powder, cinnamon, ginger and salt
  4. Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
  5. Add the soy milk, vanilla, blueberries and almonds and mix until just blended
  6. Do not overmix
  7. Transfer the dough to a lightly floured work surface and shape the dough into 1-inch-thick circle
  8. Cut the dough into 8 wedges and place them on the prepared baking sheet
  9. Bake until golden brown, about 20 minutes
  10. Cool for 5 minutes
  11. Serve warm
