Ingredients
Makes 8 scones
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 cup vegan margarine
- 1/3 cup plain or vanilla soy milk
- 1 teaspoon pure vanilla extract
- 1/2 cup frozen, fresh, or dried sweetened blueberries
- 1/2 cup slivered almonds
Method
- Preheat the oven to 375°F
- Lightly oil a baking sheet and set aside
- In a large bowl, combine the flour, sugar, baking powder, cinnamon, ginger and salt
- Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
- Add the soy milk, vanilla, blueberries and almonds and mix until just blended
- Do not overmix
- Transfer the dough to a lightly floured work surface and shape the dough into 1-inch-thick circle
- Cut the dough into 8 wedges and place them on the prepared baking sheet
- Bake until golden brown, about 20 minutes
- Cool for 5 minutes
- Serve warm
