Rum-Sauteed Pineapple Bananas
Ingredients
Makes 4 servings
- 1/4 cup vegan margarine
- 1/2 cup sugar
- 1/2 pineapple, peeled, cored and cut into 1-inch chunks
- 2 ripe bananas, cut into 1/4-inch slices
- 1/4 cup dark rum
- 2 tablespoons toasted coconut
- 2 tablespoons unsalted toasted pecans, coarsely chopped
Method
- In a large skillet, heat the margarine and sugar over medium heat
- Cook, stirring, until the sugar dissolves, about 2 minutes
- Add the pineapple and bananas and cook for 1 to 2 minutes
- Carefully add the rum and simmer until the alcohol cooks off, about 2 minutes
- Spoon into 4 dessert dishes and sprinkle with coconut and pecans
