Basic Pesto Recipe

Ingredients

Makes 1/2 CUP

  • 1 cup fresh herb leaves (basil, tarragon, mint, etc.)
  • 1 tsp salt
  • 1 tsp minced garlic
  • 2 tbsps. pine nuts, toasted
  • 2 tbsps. grated Parmesan
  • 6 tbsps. extra-virgin olive oil

Method

  1. Use a mortar and pestle to combine the herb, salt, garlic and pine nuts into a paste (or combine in a food processor)
  2. Stir in the cheese
  3. Drizzle in the olive oil a few teaspoons at a time to combine
  4. Refrigerate or freeze until ready to use
