Low Fat Bananas Foster Gratin

Low Fat Bananas Foster Gratin

Ingredients

  • 1/4 cup packed light brown sugar
  • 3 tablespoons water
  • 1 tablespoon dark rum, or fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons butter
  • 4 medium bananas
  • 1 almond or hazel nut biscotti, crushed, 1/4 cup
  • 1 pint nonfat vanilla frozen yogurt, or low-fat vanilla ice cream

Method

  1. Preheat oven to 450°F.
  2. Lightly oil four 1-to-1 1/2-cup gratin dishes or a shallow 1-quart baking dish, or coat them with nonstick spray.
  3. In a medium saucepan, combine brown sugar, water, rum (or lemon juice) and cinnamon; bring to a simmer, stirring.
  4. Remove from heat and stir in butter.
  5. The sauce will keep, covered, in the refrigerator for up to 4 days.
  6. Peel bananas and slice diagonally.
  7. Add to sauce and toss to coat.
  8. Spoon into prepared dish(es).
  9. Sprinkle with Biscotti crumbs.
  10. Bake gratin’s for about 10 minutes, or until bubbly.
  11. Serve hot or warm with a scoop of frozen yogurt (or ice cream).
