Low Fat Herbed Parmesan Oven Fries
Ingredients
1 1/2 pound baking potatoes, peeled
nonstick cooking spray
1/3 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon dried rosemary
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
Method
Preheat oven to 400°F.
Cut potatoes lengthwise into 1/4 inch thick slices, then cut the slices lengthwise into 1/4-inch-wide sticks.
Place potatoes in a large bowl, lightly spray with nonstick cooking spray; toss to coat.
Add the Parmesan, oregano, rosemary and pepper; toss again to coat thoroughly.
Transfer potatoes to two baking sheets; bake for 40 minutes, turning every 10 minutes, or until potatoes are golden brown and crisp.
Place the fries on a platter, sprinkle with salt, and serve.
Note: Be sure to spread out the fries on the baking sheets so there’s plenty of room for them to bake to a nice crispness.
