Ingredients
For Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/3 cup powdered sugar
- 1/3 cup unsweetened cocoa powder
- 1/4 cup butter
- 3 (8 ounce) packages cream cheese, softened
- 1 1/4 cups white sugar
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons all-purpose flour
- 3 eggs
- 1/2 cup sour cream
- 1/4 cup Bailey’s Irish cream liqueur
Method
- Preheat oven to 350F
- In a medium bowl, combine cookie crumbs, powdered sugar, cocoa powder and butter
- Press into the bottom of a greased, 9 inch springform pan
- Bake for 10 minutes
- Set aside
- Increase oven temperature to 450F
- In a large mixing bowl, beat together cream cheese, sugar, cocoa powder and flour until smooth
- Add eggs one at a time until just combined
- Blend in sour cream and Bailey’s Irish Cream
- Pour into crust
- Bake for 10 minutes
- Reduce heat to 250F and continue to bake for an additional 60 minutes
- Cool, cover and chill overnight
- Garnish suggestion – chocolate shavings and crushed chocolate cookie crumbs
