Ingredients
Servings : 2-4 dishes.
- 2 ripe avocados
- 1 cup coconut milk
- 1/2 cup cream of coconut
- 3/4 cup sugar
- 1/4 cup shredded coconut
Method
- Peel the avocados and put the flesh into a blender, together with the rest of the ingredients
- Pulse until smooth then pour the mixture into the container of an ice cream maker and churn according to manufacturer’s instructions
- Store in an airtight container in the freezer for as long as it takes
