Authentic Vegetable Pakoras Recipe

Ingredients

Makes 4 pakoras

  • 1 cup chickpea flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon hot or mild curry powder or garam masala
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cayenne
  • 1 tablespoon canola or grapeseed oil, plus more for frying
  • ¾ cup warm water
  • 1 cup broccoli florets, blanched
  • 1 cup peeled and sliced sweet potatoes, steamed until just tender
  • 1/2 large yellow onion, cut into 1/2-inch slices

Method

  1. In a large bowl, combine the flour, salt, baking powder, curry powder, cumin, coriander, turmeric and cayenne
  2. Stir in the 1 tablespoon of oil and the water and mix well to make a smooth batter
  3. Set aside to rest
  4. In a large skillet, heat a thin layer of oil over medium-high heat
  5. Dip the broccoli, sweet potato slices and onion slices in the batter to coat, then place them in the hot oil and fry until lightly browned, 4 to 5 minutes
  6. Drain on paper towels and serve hot
