Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 cups shredded savoy cabbage Salt and freshly ground black pepper
- 12 ounces linguine, broken into thirds
- 2 tablespoons vegan margarine
- 1 teaspoon sugar
- 1 teaspoon caraway seeds
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until soft and golden brown, about 10 minutes
- Add the cabbage and salt and pepper to taste
- Cook, uncovered, stirring occasionally, until the cabbage begins to brown slightly, about 10 minutes
- Cover, reduce heat to low and continue cooking until cabbage is soft, about 10 minutes longer
- In a large pot of boiling salted water, cook the linguine, stirring occasionally, until al dente, about10 minutes
- Drain well and transfer to a large serving bowl
- Add the cabbage mixture, margarine, sugar and caraway seeds and toss gently to combine
- Serve immediately
