Ingredients
Servings : 12 muffins.
- 1 cup coconut milk
- 1 cup applesauce
- ¼ cup agave syrup
- 1 teaspoon lemon juice
- 2 tablespoons ground flax seeds
- 1 pinch salt
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamom
- 1½ cups all-purpose flour
- ½ cup almond flour
Method
- In a bowl, mix the coconut milk with the applesauce, agave syrup, and lemon juice
- Stir in the flax seeds, flours, salt, baking soda, ground ginger, and cardamom
- Spoon the batter into your muffin pan and bake them in a preheated oven at 350°F for 30 minutes or until golden brown and fragrant
- Serve these muffins once cooled
