Apple Waldorf Bread Recipe

Ingredients

Makes 1 loaf

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 2/3 cup apple juice or soy milk
  • 1/4 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 1 large crisp apple, peeled, cored and shredded
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a large bowl, combine the flour, sugar, baking powder, cinnamon, allspice and salt
  4. Set aside
  5. In a separate large bowl, combine the apple juice, oil and vanilla
  6. Add the apple, walnuts and raisins, stirring to combine
  7. Add the wet ingredients to the dry ingredients, stirring until just blended
  8. Scrape the batter into the prepared pan
  9. Bake until golden brown and a toothpick inserted into the center comes out clean, 55 to 60 minutes
  10. Cool for 15 minutes before removing from the pan and cool for 30 minutes on a wire rack before slicing
