Ingredients
SERVES 2.
- 1 tablespoon coconut oil
- 1/2 medium green bell pepper, seeded and chopped
- 1/4 cup diced red onion
- 1/4 cup chopped white mushrooms
- 4 flatbread dough tortillas
- 2/3 cup shredded pepper jack cheese
- 1/2 medium avocado, peeled, pitted, and mashed
- 1/4 cup full-fat sour cream
- 1/4 cup mild salsa
Method
- In a medium skillet over medium heat, warm coconut oil
- Add pepper, onion, and mushrooms to skillet and saute until peppers begin to soften, 3-5 minutes
- Place two tortillas on a work surface and sprinkle each with half of cheese
- Top with sauteed veggies, sprinkle with remaining cheese, and place remaining two tortillas on top
- Place quesadillas carefully into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 5 minutes
- Flip the quesadillas halfway through the cooking time
- Serve warm with avocado, sour cream, and salsa
