Air Fryer Quiche-Stuffed Peppers
Ingredients
SERVES 2.
- 2 medium green bell peppers
- 3 large eggs
- 1/4 cup full-fat ricotta cheese
- 1/4 cup diced yellow onion
- 1/2 cup chopped broccoli
- 1/2 cup shredded medium Cheddar cheese
Method
- Cut the tops off of the peppers and remove the seeds and white membranes with a small knife
- In a medium bowl, whisk eggs and ricotta
- Add onion and broccoli
- Pour the egg and vegetable mixture evenly into each pepper
- Top with Cheddar
- Place peppers into a 4-cup round baking dish and place into the air fryer basket
- Adjust the temperature to 350°F and set the timer for 15 minutes
- Eggs will be mostly firm and peppers tender when fully cooked
- Serve immediately
