Air Fryer Vanilla Pound Cake Recipe

Ingredients

SERVES 6.

  • 1 cup blanched finely ground almond flour
  • 1/4 cup salted butter, melted
  • 1/2 cup granular erythritol
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 cup full-fat sour cream
  • 1 ounce full-fat cream cheese, softened
  • 2 large eggs

Method

  1. In a large bowl, mix almond flour, butter, and erythritol
  2. Add in vanilla, baking powder, sour cream, and cream cheese and mix until well combined
  3. Add eggs and mix
  4. Pour batter into a 6 round baking pan
  5. Place pan into the air fryer basket
  6. Adjust the temperature to 300°F and set the timer for 25 minutes
  7. When the cake is done, a toothpick inserted in center will come out clean
  8. The center should not feel wet
  9. Allow it to cool completely, or the cake will crumble when moved
