Ingredients
SERVES 4.
- 2 tablespoons salted butter
- 1/4 cup diced white onion
- 1/4 cup chopped white mushrooms
- 2 stalks celery, finely chopped
- 1/2 cup heavy cream
- 1/2 cup vegetable broth
- 2 tablespoons full-fat mayonnaise
- 1/4 teaspoon xanthan gum
- 1/2 teaspoon red pepper flakes
- 2 medium zucchini, spiralized
- 2 (5-ounce) cans albacore tuna
- 1 ounce pork rinds, finely ground
Method
- In a large saucepan over medium heat, melt butter
- Add onion, mushrooms, and celery and saute until fragrant, about 3-5 minutes
- Pour in heavy cream, vegetable broth, mayonnaise, and xanthan gum
- Reduce heat and continue cooking an additional 3 minutes, until the mixture begins to thicken
- Add red pepper flakes, zucchini, and tuna
- Turn off heat and stir until zucchini noodles are coated
- Pour into 4-cup round baking dish
- Top with ground pork rinds and cover the top of the dish with foil
- Place into the air fryer basket
- Adjust the temperature to 370°F and set the timer for 15 minutes
- When 3 minutes remain, remove the foil to brown the top of the casserole
- Serve warm
