Ingredients
SERVES 4.
- 1/2 cup blanched finely ground almond flour
- 1/4 cup powdered erythritol
- 2 tablespoons unsalted butter, softened
- 1 large egg
- 1/2 teaspoon unflavored gelatin
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 2 tablespoons low-carb, sugar-free chocolate chips
Method
- In a large bowl, mix almond flour and erythritol
- Stir in butter, egg, and gelatin until combined
- Stir in baking powder and vanilla and then fold in chocolate chips
- Pour batter into 6 round baking pan
- Place pan into the air fryer basket
- Adjust the temperature to 300°F and set the timer for 7 minutes
- When fully cooked, the top will be golden brown and a toothpick inserted in center will come out clean
- Let cool at least 10 minutes
