Air Fryer Loaded Cauliflower Breakfast Bake Recipe

Ingredients

SERVES 4.

  • 6 large eggs
  • 1/4 cup heavy whipping cream
  • 11/2 cups chopped cauliflower
  • 1 cup shredded medium Cheddar cheese
  • 1 medium avocado, peeled and pitted
  • 8 tablespoons full-fat sour cream
  • 2 scallions, sliced on the bias
  • 12 slices sugar-free bacon, cooked and crumbled

Method

  1. In a medium bowl, whisk eggs and cream together
  2. Pour into a 4-cup round baking dish
  3. Add cauliflower and mix, then top with Cheddar
  4. Place dish into the air fryer basket
  5. Adjust the temperature to 320°F and set the timer for 20 minutes
  6. When completely cooked, eggs will be firm and cheese will be browned
  7. Slice into four pieces
  8. Slice avocado and divide evenly among pieces
  9. Top each piece with 2 tablespoons sour cream, sliced scallions, and crumbled bacon
