Ingredients
SERVES 6.
- 1 cup shredded mozzarella cheese
- 1 ounce full-fat cream cheese
- 1 cup blanched finely ground almond flour
- 1/4 cup ground flaxseed
- 1/2 teaspoon baking powder
- 1 large egg
Method
- Place mozzarella, cream cheese, and almond flour in a large microwave-safe bowl
- Microwave for 1 minute
- Mix until smooth
- Add flaxseed, baking powder, and egg until fully combined and smooth
- Microwave an additional 15 seconds if it becomes too firm
- Separate the dough into six pieces and roll into balls
- Place the balls into the air fryer basket
- Adjust the temperature to 320°F and set the timer for 12 minutes
- Allow rolls to cool completely before serving
