Ingredients
Serves 2-4
- ½ cup yellow cornmeal
- ½ cup all-purpose flour
- 2 tablespoons sugar
- 1½ teaspoons baking powder
- ½ teaspoon kosher salt
- ½ cup whole milk
- ¼ cup vegetable oil
- 2 eggs
- ½ cup fresh or frozen corn kernels
- ½ cup fresh jalapeno (optional), sliced thin and seeds removed non-stick cooking spray
Method
- Whisk all dry ingredients together in a mixing bowl
- Lightly beat wet ingredients together, then pour over the dry mix and whisk until smooth
- Mix in corn and jalapenos
- Lightly coat an oven-safe dish* with non-stick spray; pour in corn bread mixture
- Place the dish into the basket, then put the basket and pan into the AIR FRYER
- Set temperature to 350 degrees and set timer for 25 minutes
- When timer goes off, check for doneness with a toothpick
- When inserted off center it should come out clean
- If not done, bake 5 minutes longer
- When cooking is complete, invert onto a plate, then invert onto another plate to have rounded top facing up
