Ingredients
SERVES 4.
- 2 medium green tomatoes
- 1 large egg
- 1/4 cup blanched finely ground almond flour
- 1/3 cup grated Parmesan cheese
Method
- Slice tomatoes into 1/2-thick slices
- In a medium bowl, whisk the egg
- In a large bowl, mix the almond flour and Parmesan
- Dip each tomato slice into the egg, then dredge in the almond flour mixture
- Place the slices into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 7 minutes
- Flip the slices halfway through the cooking time
- Serve immediately
