Ingredients
Makes about 3 dozen cookies
- ¾ cup pine nuts
- 1 cup vegan margarine, softened
- ¾ cup sugar
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
Method
- Preheat the oven to 350°F
- Finely grind 1/2 cup of the pine nuts and set aside
- In a large bowl, cream together the margarine and sugar until light and fluffy
- Beat in the vanilla and set aside
- In a medium bowl, stir together the flour, salt and baking powder
- Add the flour mixture to the sugar-margarine mixture
- Add the ground pine nuts to the dough, mixing well
- Drop the dough, 1 teaspoonful at a time, 2 inches apart, onto an ungreased baking sheet, pressing a few of the remaining 1/4 cup pine nuts into the top of each cookie
- Bake until a light golden brown, 12 to 15 minutes
- Cool on the baking sheet for 5 minutes before carefully transferring to a wire rack to cool completely
- Store in an airtight container
