Sweet Potato Vichyssoise Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 2 medium leeks, white parts only, well rinsed and chopped
  • 3 large sweet potatoes, peeled and chopped
  • 3 cups vegetable broth or water
  • salt
  • pinch ground cayenne
  • 1 cup plain unsweetened soy milk, or more as needed Snipped fresh chives, for garnish

Method

  1. In a large soup pot, heat the oil over medium heat
  2. Add the leeks and cook until soft, about 5minutes
  3. Add the sweet potatoes, broth and salt and cayenne to taste
  4. Bring to a boil, then reduce heat to low and simmer, uncovered, until the potatoes are soft, about 30 minutes
  5. Puree the soup in the pot with an immersion blender or in a blender or food processor, in batches if necessary
  6. Transfer to a large container and stir in the soy milk
  7. Cover and refrigerate until chilled, at least 3 hours
  8. Taste, adjusting seasonings if necessary and adding a bit more soy milk if the soup is too thick
  9. Ladle into bowls, sprinkle with chives and serve
