Ingredients
- 1/3 cup (67 g) sugar
- 2 tbsps (28 g) unsalted butter
- ¼ cup (60 ml) egg substitute
- 1 ounce 28g unsweetened chocolate, melted and cooled
- 1¼ cups (156 g) flour
- 1 tsp baking soda
- ½ cup (120 ml) buttermilk
- ½ teaspoon vanilla
Method
- Cream sugar and butter with an electric mixer
- Add egg substitute and mix well
- Beat in chocolate
- Stir together flour and baking soda
- Add to sugar mixture alternately with buttermilk and vanilla; beat well
- Divide into two well-greased 1-pound (455 g) vegetable cans
- Cover tightly with foil
- Place in slow cooker
- Pour ½ cup (120 ml) warm water around cans
- Cover and cook on high 1½ hours
- Remove cans from cooker; cool 10 minutes; unmold
- Yield: 8 servings
- Per serving: 23 g water; 160 calories (29% from fat, 10% from protein, 61% from carb)
