Potato Soup Slow Cooker Recipe
Ingredients
- 2-3 potatoes, peeled and diced
- 700 ml water
- 2 L low-salt vegetable broth
- 2 360 g diced onion
- ½ cup (50 g) diced celery
- ½ cup (65 g) diced carrots
- ¼ teaspoon pepper
- 1½ cups (355 ml) evaporated milk
- 2 tbsps (12 g) chopped fresh parsley
Method
- Combine all ingredients except milk and parsley in slow cooker
- Cover and cook on high 7 to 8 hours or until vegetables are tender
- Stir in milk and parsley
- Yield: 8 servings
- Per serving: 452 g water; 296 calories (14% from fat, 16% from protein, 71% from carb)
