Swiss Steak Slow Cooker Recipe
Ingredients
- ¼ cup (31 g) flour
- 1 pound (900 g) round steak
- 2 tbsps (28 ml) olive oil
- 1 cup (160 g) sliced onion
- 1 cup (150 g) green bell pepper strips
- ½ cup (65 g) sliced carrots
- ½ cup (50 g) chopped celery
- 1 tsp finely minced garlic
- 1½ cups (355 ml) low-salt beef broth
- 2 cups (360 g) no-salt-added diced tomatoes, drained
- 1 tbsp (15 g) brown sugar
Method
- Put the flour in a flat dish
- Pound the meat using a meat tenderizer for a few minutes and then dredge the meat in the flour and pound it in
- Heat oil in a large skillet
- Add the meat and brown on both sides
- Remove the meat from the skillet and add it to your slow cooker
- Add the onions, green pepper, carrots, and celery to the skillet and brown
- Put them into your slow cooker
- Add the beef broth to the skillet and cook over medium heat, scraping the bottom to get all the browned bits
- Add this to your cooker along with the tomatoes and brown sugar
- Cook on low for 8 to 10 hours
- Yield: 6 servings
- Per serving: 324 g water; 433 calories (35% from fat, 51% from protein, 14% from carb)
