Ingredients
- 8 slices Italian peasant bread, 1/2″ thick
- 2 cups snow crab meat – (abt 4 oz)
- 2 tablespoons regular or low-fat mayonnaise
- 2 teaspoons sour cream
- 1/2 teaspoon dry mustard
- 4 teaspoons finely-chopped chives
- freshly-ground black pepper — to taste.
Method
- Grill the bread, or toast it in a 350 degree oven until the bread is golden brown
- Using a fork, in a bowl, combine the crab meat, mayonnaise, sour cream, mustard, and 2 teaspoons of the chives
- Season to taste with pepper
- Spread each crisp with one-eighth of the crabmeat mixture
- Sprinkle with the remaining chives, and serve
- This recipe yields 8 servings
- Comments: Blending snow crab with a minimum of seasonings – just a bit of mayonnaise and sour cream, and a touch of mustard – shows off its fresh, briny sweetness
