Macaroni And Cheese With Eggs Recipe

Ingredients

Serves 6

  • 3 tbsps. unsalted butter
  • 1/2 cup chopped white onion
  • 3 tbsps. all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 cup grated Gruyere cheese
  • 1/2 tsp freshly ground white pepper
  • 1/2 tsp ground nutmeg
  • 8 oz. penne, cooked and drained
  • 2 tsps. minced fresh thyme
  • 1/4 cup fresh coarsely ground bread crumbs
  • 6 large eggs

Method

  1. Melt the butter in a medium saucepan
  2. Add the onion and cook on low until translucent
  3. Sprinkle on the flour and whisk continuously for 3 minutes
  4. Add the milk and cream all at once, whisking continuously until combined
  5. Stir in the bay leaf
  6. Bring to a simmer, then lower heat and cook for about 25 minutes, until slightly thickened
  7. Remove the mixture from the heat
  8. Remove the bay leaf and discard
  9. Stir in the cheese, pepper and nutmeg
  10. Season with salt to taste
  11. Preheat the oven to 400 degrees F
  12. Butter 6 individual ramekins
  13. Remove the mixture from the heat and stir in the cheese, pepper and nutmeg
  14. Stir the penne into the cheese mixture to combine
  15. Stir in the chopped thyme
  16. Divide the mixture among the ramekins
  17. Sprinkle on the bread crumbs and place in the oven
  18. Turn the oven down to 375 degrees F and bake for 15-20 minutes, until mixture is bubbling and the top is browned
  19. Remove from the oven and allow to cool slightly
  20. In the meantime, prepare the poached eggs according to your preferred method
  21. Place an egg on top of each ramekin to serve
