Basic Brown Jasmine Rice Recipe

Ingredients

Makes 5 :Servings

  • 1 tablespoon olive oil
  • 1/2 tablespoon minced garlic
  • 1/3 cup sliced green onion
  • 1 teaspoon fresh thyme
  • 1 cup brown jasmine rice
  • 11/4 cups no-salt-added vegetable broth
  • 11/2 cups water
  • zest and juice of 1/2 lemon, plus 1 strip lemon rind.
  • 1/2 cup finely chopped and packed fresh cilantro
  • sea salt and black pepper

Method

  1. Set a large nonstick skillet over medium heat and add the olive oil
  2. Once the oil is hot, add the garlic, green onion, and thyme
  3. Saute for 2 to 3 minutes to flavor the oil and wilt the onions
  4. Add the rice and cook for another 2 minutes
  5. Pour in the broth and water
  6. Bring to a simmer, reduce the heat to low, then cover and cook for 25 minutes
  7. When the rice is nearly finished cooking, add the lemon rind, then cover and cook until all the water is absorbed
  8. Remove the skillet from the heat and let it sit covered for 6 to 8 minutes so the flavors can meld
  9. Remove the lemon rind and fluff the rice with a fork
  10. Add the lemon juice, grated lemon zest, and cilantro
  11. Season to taste with salt and pepper
