Impossible Cheesecake Recipe

Ingredients

  • Serving Size : 8
  • 3/4 cup sugar
  • 1/2 cup Bisquick. baking mix
  • 2 eggs
  • 16 ounces cream cheese – cut in 1-inch cubes
  • 2 teaspoons vanilla
  • 1/2 teaspoon lemon peel – grated
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 2 teaspoons vanilla

Method

  1. Heat oven to 350 degrees.
  2. Grease 9″ pie plate.
  3. Place 3/4 cup sugar, baking mix, eggs, cream cheese, 2 tsp vanilla and lemon peel in blender container.
  4. Blend on high speed, stopping blender occasionally to stir, until smooth about 3 minutes.
  5. Pour into pie plate.
  6. Bake just until puffed and center is dry, about 30 minutes.
  7. Do not overbake.
  8. Mix sour cream, 2 tbsp sugar and 2 tsp vanilla.
  9. Spread carefully over top of cake, cool.
  10. Refrigerate until chilled, at least 3 hours.
  11. Serve with sweetened strawberries if desired.
