- 3 bell peppers, halved, seeds removed
- 3 eggs, whisked
- 1 cup Mexican cheese blend
- 1 teaspoon chili powder
- 1 garlic clove, minced
- 1 teaspoon onion powder
- 1 ripe tomato, pureed
- 1 teaspoon mustard powder
Method
- Start by preheating your oven to 370 degrees F.
- Spritz the bottom and sides of a baking pan with a cooking oil.
- In a mixing bowl, thoroughly combine the eggs, cheese, chili powder, garlic, and onion powder.
- Divide the filling between the bell peppers.
- Mix the tomatoes with mustard powder and transfer the mixture to the baking pan.
- Cover with foil and bake for 40 minutes, until the peppers are tender and the filling is thoroughly heated.
